Prepare a massa misturando a farinha e o sal, incorporando a manteiga gelada com a ponta dos dedos at\u00e9 parecer uma farofa.<\/p>\n<p>2.  Trabalhe a massa sovando at\u00e9 ficar homog\u00eanea. Acrescente a \u00e1gua e  misture para formar uma bola. N\u00e3o trabalhar demais para n\u00e3o endurecer.<\/p>\n<p>3. Cubra com filme pl\u00e1stico e descanse a massa na geladeira por 30 minutos.<\/p>\n<p><em>*<strong>P\u00e2te Bris\u00e9e<\/strong>:  Normalmente n\u00e3o cont\u00e9m a\u00e7\u00facar e utiliza quantidades m\u00ednimas de sal. Em  alguns casos \u00e9 adicionada de a\u00e7\u00facar que normalmente \u00e9 na mesma propor\u00e7\u00e3o  do sal. Abra a massa em uma assadeira apropriada, fa\u00e7a v\u00e1rios furos com o garfo no fundo da massa e pincele com um pouco de clara.<\/p>\n<p>2. Asse a massa a 180\u00baC, por alguns minutos apenas para selar a superf\u00edcie. Retire do forno e deixe esfriar.<\/p>\n<p>3. Corte o alho por\u00f3 em rodelas finas, filetes (julienne) ou pedacinhos<\/p>\n<p>4. Doure o alho por\u00f3 em fogo baixo numa frigideira com manteiga e um filete de azeite, at\u00e9 ficar macio e saboroso, reserve.<\/p>\n<p>4. Misture todos os ingredientes do recheio em um bowl (vasilha) com o aux\u00edlio de um fouet (batedor).<\/p>\n<p>5. Tempere com sal, pimenta branca e noz-moscada.<\/p>\n<p>6. Despeje o recheio na massa, disponha sobre o recheio o alho por\u00f3 refogado, apare as bordas (se necess\u00e1rio) e asse em forno pr\u00e9-aquecido a 180\u00baC por aproximadamente 1 hora ou at\u00e9 que a quiche esteja firme e dourada.<\/p>\n<p><em>**Caso n\u00e3o encontrem o queijo Gruy\u00e8re pode-se substitu\u00ed-lo pelo queijo Gouda ou uma mistura de Ricota com Grana Padano (Parmes\u00e3o)!
