Quebre o ovo sem danificar a gema.<\/p>\n<p>2. Aque\u00e7a a manteiga em uma frigideira de teflon e despeje o ovo com cuidado. Abaixe o fogo e cozinhe.<\/p>\n<p>3. Quando as claras ficarem firmes, solte o ovo do fundo da frigideira. Se desejar, levante-a levemente, colete a gordura e cubra o ovo com ela.<\/p>\n<p>4. Caso queira, leve o ovo at\u00e9 a borda da frigideira e vire-o, para cozinhar do outro lado. O resultado ser\u00e1 um ovo mais duro.<\/p>\n<p>5. Em uma panela, misture a \u00e1gua com o vinagre na propor\u00e7\u00e3o de um litro de \u00e1gua para uma colher (sopa) de vinagre e aque\u00e7a a 85\u00baC.<\/p>\n<p>2. Quebre o ovo em uma x\u00edcara, um de cada vez, tomando cuidado para n\u00e3o danificar as gemas.<\/p>\n<p>3. Coloque o ovo na \u00e1gua quente (fervura branda) por cerca de 4 minutos ou at\u00e9 que estejam prontos. Os ovos escalfados devem ficar macios ao toque. (se estiverem duros, \u00e9 porque cozinharam demais).<\/p>\n<p>4. Remova os ovos cuidadosamente com uma escumadeira, e coloque-os na \u00e1gua fria.<\/p>\n<p>5. Tire os ovos da \u00e1gua fria e apare as bordas da clara, se desejar.<\/p>\n<p>6. Para o servi\u00e7o aque\u00e7a-os em \u00e1gua salgada a 60\u00baC. Escorra e seque-os. Junte o recheio, se desejar, e cozinhe at\u00e9 endurecer, em fogo lento, sem dourar.<\/p>\n<p>5. Dobre a omelete cobrindo todo o recheio.
